My favorite cooked food of the past was pasta with Alfredo sauce. And I was obsessed. I would have the dish around three times a week, I even had my own Alfredo sauce recipe down pat. Since becoming raw vegan, this meal is still available, yet obviously I am not going to eat the cooked, cream laden version any time soon.
As an alternative, nut-based sauces seem to be quite the staple item in the raw vegan community. However, when your aim is to feel light and energetic after meals, all those toughly digestible nuts are not gonna cut it.
Thankfully, low-fat-raw-vegan recipe makers Megan Elizabeth and Chris Kendall are readily there with a Raw Vegan Creamy Alfredo Sauce designed to delight and nourish, while also bringing easy digestion into the equation.
Raw Vegan Creamy Alfredo Pasta Recipe
- 1 cup young tai coconut water
- 1/4 cut raw hemp seeds
- meat of one tai coconut(one cup)
- 1-4 cup cilantro
- 1/4 cup green onion (top green part only)
- Juice of half lemon (2 tbsp)
- 1 tbsp fresh rosemary
- 1 tsp fresh oregano
- Spiralized vegetable noodles
1) Add all ingredients, except for noodles, into blender.
2) Blend blend blend!
3) Pour sauce over pasta
4) Dress dish with tomatoes and oregano

This recipe rocks!
MUCH eaiser to digest than cashew-based sauces, because it is coconut based with added hemp seeds.
