I know so many people who are fans of carrot cake including me but I had said goodbye to cake because it was not vegan nor was it raw. Thanks to this raw vegan carrot cake recipe I can have cake again. Do you hear the gates of haven opening up? I do Ahhhh! and I see me enjoying carrot cake again this time raw and healthy no refined sugar nor dairy just pure wholesome goodness.
I am so grateful for this youtube raw vegan carrot cake recipe I had to share with all of you. Its easy, simple, nutritious and delicious.
Raw Vegan Carrot Cake Recipe
1 cup dates
1 cup walnuts
2 cups grated carrots
1/4 cup shredded coconut
1 tsp ginger
1 tsp cinnamon
1/8 tsp nutmeg
2 cans coconut cream (needs to be opened and chilled in the fridge for several hours)
Cake-Mix dates and walnuts together in your food processor, then blend in your spices. Next pore mixture into mixing bowl, add carrot’s and mix well, add coconut and raisins mixing well again. Pore everything into swerving plate. Pushing down into plate to for the cake. Refrigerate for an hour.
Frosting- blend 2 cans coconut cream that has been chilled together. ( if you need it to be more fluffy try whipping it in a mixing bowl) Cover the top of your cake and there you have a raw vegan carrot cake.
So many birthdays come and go and so many of us go buy a store bought cake to celebrate not really knowing whats in it. The sad thing is most store bought cakes are totally unhealthy and loaded with white flower and refined sugar. This recipe is so amazing it wont hurt your body like the others cakes do and you know you will be giving the birthday gay/gale a treat that they really need.
