Every so often I recommend treating yourself to something extra special. Remember how you used to have to get that chocolate fix? Meet your new, much more satisfactory “fix”, Freelee’s Raw Vegan Banana Creme Torte. I can always count on Freelee’s recipes to be fruit-based, magical creations that showcase the fruit’s depth of flavor. Not to say anything against raw veggie-based, cooked-food-imitation recipes, but when creating with fruit, you really can’t go wrong!
Raw Vegan Banana Creme Torte Recipe
10-15 dried Turkish figs
1 cup of young coconut meat
1 cup of coconut water
3 drops of vanilla creme stevia drops (optional)
2 heaped tsps(combined) of warming spice, cinnamon, cardamom, ginger, nutmeg, cloves
You will need:
Spring form tin
Process 18 dates, all figs and warming spice in food processor or blender until combined, set aside.
Grease tin with a small amount of coconut oil then dust with carob powder to provide non-stick surface for base.
Blend remaining dates with coconut flesh with half to one cup of coconut water and 3 drops of vanilla creme stevia drops until u get a smooth creamy consistency, set aside.
Press base into spring form tin then layer 2 layers of thinly sliced bananas followed by a spread of vanilla creme, continue alternating until tin is filled and have fun with the decorations!
Place in freezer or fridge for 2hrs to assist in setting the torte.
