Monica Stoutenborough is the owner of Pura Vegan Cafe in Saint Louis, Missouri. One and a half years ago she left the very stressful stock brokerage industry, where she has worked for 13 years, and started her raw vegan journey.
After overcoming some health issues and losing weight, Monica decided to transform her passion into a career and do all she could to spread the message. That’s the way Pura Vegan Cafe was born. The result of that decision is a growing vegan and raw vegan community in Saint Louis.
I really loved talking with Monica for the following interview and learning more about all the services she offers there. And I’d love if there was a Pura Vegan Cafe here in the city where I live too.

Carrot Ginger Raw Vegan Soup Recipe
2 cups carrot juice
juice of one orange
3 TBSP cashews
2 TBSP mild yellow miso
2 tsp fresh ginger
1 TBSP onion
2 tsp curry powder
Blend all ingredients in a high powered blender until smooth. Serve with green onions on top.
